• 1 cup granulated sugar
• ⅓ cup vegetable oil
• 2 tablespoons orange juice
• 1 teaspoon pure vanilla extract
• 2 large eggs
• ¾ cup plus 2 tablespoons all-purpose flour
• 1 teaspoon baking powder
• ½ teaspoon baking soda
• ¼ teaspoon ground cinnamon
• ¼ teaspoon nutmeg
• ½ teaspoon salt
• 1½ cups shredded carrots
• ½ cup chopped walnuts
• ¼ cup shredded coconut
• 1 block cream cheese (8oz), at room temperature
• ¼ cup (4 Tablespoons) unsalted butter, at room temperature
• 2-3 cups powdered confectioners' sugar, sifted
