Creamy Mushroom Soup

Ingredients

• Minced shallot – 1/2 cup.
• Mixed mushrooms- 1 pound. (It should be cleaned and stems separated from caps).
• Olive oil – 3 tablespoons.
• Cremini mushrooms – 1pound. (Cleaned and stems separated).
• Rosemary sprig – 1 no.
• Salt – to taste.
• Pepper – to taste.
• Thyme sprig – 6 nos.
• Cognac – 1/4 cup.
• Whipping cream – 1/4 cup.
• Rich homemade chicken stock – 4 cups.
• Chopped chives – 1/4 cup.
