- 4-6 frozen Cornish mackerel fillets (Waitrose), or similar
- olive oil, for brushing
- 8 large basil leaves
- 1 clove garlic, peeled
- 1 teaspoon Maldon sea salt
- 2 anchovy fillets in extra virgin olive oil (Sainsbury’s), drained
- zest and juice of 1 lime
- 1 tablespoon capers, rinsed and drained
- 1 rounded teaspoon grain mustard (Tiptree organic hot English is good)
- 2 tablespoons olive oil
