- salt and pepper to taste
- 2 T butter
- 1 carrot, minced
- 1 medium onion, minced
- 2 green onions, minced
- 2 T all purpose flour
- 2 cups stock: chicken, beef or lamb
- 4 T dark beer
- ⅓ cup peas
- 1 tsp fresh thyme
- 1 tsp fresh parsley
- ½ tsp sage
- 7 russet potatoes, peeled and chopped
- ½ cup cream
- salt and white pepper
