Ingredients

• 2/3 cup (95 g) unbleached all-purpose flour
• 2 tsp baking powder
• 1 1/2 cups (400 g) ricotta cheese
• 1/3 cup (70 g) sugar
• 3 eggs
• 1/2 tsp (2.5 ml) vanilla extract
• 3 tbsp (26 g) raisins or dried currants
• 1/2 unpeeled Empire apple, cored and thiny sliced
• 4 scoops vanilla ice cream
• 1/2 unpeeled Empire apple, julienned
• Icing sugar, to taste
