Ingredients

• 1 cup all-purpose flour (this is a 250ml baking cup)
• ¼ tsp salt
• 1 tsp baking powder
• 4 eggs, whites and yolks separated
• 60 g sugar
• 100 ml neutral-tasting vegetable oil
• ½ tbsp freshly squeezed lemon juice (from one lemon) *Save 1 tablespoon if you’re making lemon frosting
• 1 tsp lemon zest (from one lemon)
• 30 g unsalted butter (1⁄2 stick), room temperature
• 100 g confectioners’ sugar (a.k.a. icing sugar)
• 1 tbsp freshly squeezed lemon juice
