Creamy Kale & Sausage Soup - Brooklyn's Bites

Ingredients

• 1.5lbs ground Italian sausage
• 1 yellow onion, diced
• 1 red bell pepper, diced
• 1 green bell pepper, diced
• 5 garlic cloves, minced
• 1 tsp pepper
• 1 tsp salt
• 1/2 lemon, juiced
• 1, 14 oz can fire roasted tomatoes
• 12 oz can full fat coconut milk (NEEDS to be in a can and make sure you use unsweetened! The best brand for this is Target Good & Gather)
• 8 cups chicken broth
• 2.5-3 cups small pasta (cavatelli, orecchiette, elbows, etc)
• 5-6 cups kale, destemmed and chopped
• Grated Parmesan cheese for topping
