• 1 poblano pepper, finely chopped
• 1 pinch salt
• 2 cloves garlic, minced
• 1 cup sour cream
• 1 egg, beaten
• 1 can (11 ounces) white shoepeg corn, drained
• 1 can (11 ounces) Mexi-corn
• 1 can (16 ounces) cream corn
• 3 cans (4 ounces) diced green chiles
• 1 cup shredded sharp Cheddar cheese, divided
• 1 cup shredded pepper jack cheese, divided
• 1 package (9 ounces) corn muffin mix
