Ingredients

• 1 x 2-3 lbs . whole chicken
• 1 Cup Jerk Paste
• Jerk Spice Paste
• 2.5 cm fresh ginger root, finely grated
• 2 cloves garlic, crushed
• 1 to 2 Scotch bonnet chilies, finely chopped (remove seeds for less heat)
• 2 tbsp. olive oil
• 1 tbsp. allspice, ground
• 1 tbsp. cinnamon, ground
• 1 tbsp. paprika (unsmoked)
• 3 sprigs fresh thyme, chopped
• 1 tbsp. soft brown sugar
• 1 lime, cut into wedges
• salt and freshly ground black pepper to taste
