Ingredients

• 1 can whole kernel corn OR Del Monte Southwest, Mexican or Mediterranean corn medley
• 1 c (250 ml) tomatoes, chopped
• 1 jalapeno, seeded and finely chopped
• 1 tbsp (15 ml) lime juice
• 1/2 tsp (2 ml) ground cumin
• 1/4 c (60 ml) fresh cilantro, chopped
• Salt and freshly ground pepper
