Shorbet Adas (Lebanese Lentil Soup) - Middlebury Food Co-op

Ingredients

• 2.5 C lentils
• 1 med onion, peeled and chopped
• 1 large carrot, peeled and chopped
• 1 small potato, peeled and cubed
• 2 tsp cumin powder
• 1 tsp black pepper
• 1 T salt
• 12 C water or broth
• 2 T fresh parsley, chopped
• juice of 3 lemons
• fried/toasted pita bread (optional)
• thinly sliced caramelized onions (optional)
