- 5 ounces red or green fresh (and fleshy) chilies, stemmed and coarsely chopped (about 1-1/2 cups)
- 5 cloves garlic, coarsely chopped
- 1 (1-inch piece) peeled fresh ginger, coarsely chopped
- 1-1/2 teaspoons sugar
- 3/4 to 1 teaspoon kosher salt
- 1/2 cup water
- Freshly squeezed juice of 1/2 medium lemon (about 2 tablespoons)
- Finely grated zest of 1/2 medium lemon (about 1 tablespoon)
- 1-1/2 tablespoons peanut or vegetable oil
