Ingredients
- Candied lime
- 3 limes
- 1/2 cup (110g) caster (superfine) sugar
- 1 cup (250ml) water
- 1/4 cup (55g) caster (superfine) sugar, extra
- Lime and yoghurt cakes
- 250 grams butter, softened
- 2 teaspoons vanilla extract
- 1 tablespoon finely grated lime rind
- 1 cup (220g) caster (superfine) sugar
- 3 eggs, separated
- 2 cups (300g) self-raising flour
- 1 cup (280g) greek-style yoghurt
- 2 tablespoons edible white flowers, to decorate (optional)
- Elderflower syrup
- 1/3 cup (80ml) strained lime juice
- 3/4 cup (165g) caster (superfine) sugar
- 1/4 cup (60ml) water
- 1/2 cup (125ml) elderflower cordial
