Ingredients

  • 1 cup jasmine white rice
  • 1 tsp olive oil
  • 3 tbsp soy sauce or tamari
  • 1 tbsp sesame oil
  • 3 -inch knob ginger (,peeled, grated (1 tbsp))
  • 1 tbsp maple syrup or honey
  • ¼ tsp red pepper flakes (optional, for spice)
  • 1 bunch scallions (green and white parts separated, thinly sliced)
  • 1 lb grass-fed ground beef
  • 4 eggs (fried)
  • Kimchi (optional (or use sriracha for spice))
  • Sesame seeds ( for garnish)
  • 1 large or 2 small cucumbers (peeled, thinly sliced)
  • ¼ cup rice vinegar
  • ¼ cup water
  • ¼ tsp kosher salt
  • 1 (16 oz) bag frozen spinach
  • 2 tsp sesame oil
