Ingredients

  • 6 to 8 tablespoons sesame or olive oil
  • 2 medium eggplants (about 2 pounds)
  • Sea salt, to taste
  • 1 large onion, chopped
  • 2 cloves garlic, finely chopped
  • 1 whole chicken, 4 to 5 pounds, cut into 8 pieces
  • 1 teaspoon ground allspice
  • 1/2 teaspoon ground turmeric
  • 1 1/2 cups chicken stock or water
  • 1 dried lime (optional, available at Middle Eastern groceries)
  • 1 bunch Swiss chard or spinach (about 1 pound), cleaned, trimmed and roughly chopped into 1- to 2-inch pieces (including stems)
  • Juice of 1 lemon
