Ingredients

• 8 skin-on chicken thighs, or cut of choice
• Kosher salt& freshly ground black pepper
• Fustini's Tuscan Herb olive oil, for drizzling
• 1 onion, chopped
• 3 cloves garlic, minced
• 2 carrots, sliced
• 8 oz. sliced mushrooms
• 6 thyme sprigs
• 1/2 cups dry white wine
• 1 (28-oz.) can crushed tomatoes
• 3 tablespoons drained capers
• 1/4 cup freshly chopped parsley
