Muffin Tin Christmas Potatoes

Ingredients

• 1.5 lbs little potatoes
• 2 medium carrots, peeled and finely chopped
• 2 ribs celery, finely chopped
• 1 small onion, peeled and finely chopped
• 3 Tbsp unsalted butter, melted and cooled
• 2 large eggs, briefly beaten with a fork in a small bowl
• 2 Tbsp fresh parsley, chopped
• 2 Tbsp fresh rosemary, chopped
• 2 Tbsp fresh thyme leaves
• 3/4 tsp fine sea salt
• 3/4 tsp ground black pepper
