Mung Bean Daifuku Mochi is a traditional Japanese sweet dessert (wagashi) with a soft mochi confection stuffed with a creamy mung bean paste.
Ingredients
- 200 grams mung beans (1 cup dried)
- 3 cups water
- 200 grams granulated sugar (1 cup)
- salt (pinch)
- 100 grams glutinous rice flour (3/4 cup (sweet Rice Flour))
- 180 ml water (3/4 cup)
- 50 grams granulated sugar (1/4 cup)
- 100 grams potato starch (1/2 cup (can substitute with corn starch))
- 1.5 cups mung bean paste ((or adzuki red bean paste if you prefer) recipe below)
- 1/2 cup sesame seeds (toasted - optional)
