Mexican Corn Salad - A better choice!

Ingredients

• 5 ears of corn, cut from the cob
• 1 tbsp olive oil
• ½ large red capsicum, chopped
• ½ small red onion, finely chopped
• ½ cup fresh coriander, chopped
• 6 spring onions, finely chopped
• 1 avocado, diced
• 3 tbsp lime juice
• ½ tsp ground cumin
• ½ tsp smoked paprika
• 4 tbsp sour cream
• ½ cup feta, crumbled
• Salt and pepper, to taste
