• 1 stick butter (cold cut into small pieces)
• 1 1/2 Tablespoons sugar
• 1 pinch salt
• 4-5 Tablespoons ice water
• 3 medium firm but ripe pears (halved, peeled and cored)
• 5 Tablespoons sugar
• 1/2 stick buttercold (cut into small pieces)
• 2 Tablespoons pear brandy
• For the glaze
• 1/3 cup apricot jelly
• 8 ounces mascarpone cheese
• 1 Tablespoon confectioners sugar
