Bourbon Pecan Pie

Ingredients

• 1 1/4 cups all-purpose flour
• 1/2 cup (1 stick) unsalted butter, cold and cut in 1/4" cubes
• Pinch of salt
• 1/4 cup ice cold water
• 3 large Pete & Gerry's eggs, at room temperature
• 3/4 cup light brown sugar
• 1/2 cup light corn syrup
• 1/4 cup (1/2 stick) unsalted butter, melted
• 2 tablespoons molasses
• 2 teaspoons vanilla extract
• 2 tablespoons bourbon, optional
• 2 cups toasted pecans, roughly chopped
