Ingredients
- 1 pound of corn cut off the cob or frozen corn
- 2 tbsp of Kewpie Mayo
- 1/2 tbsp lime juice
- 1/2 white onion, finely diced
- 1/2 tsp Tajín seasoning
- 2 tbsp cilantro, finely chopped (reserve a couple whole leaves for garnish)
- 2 tbsp Cotija cheese
- salt and pepper to taste
