Being an Irishman I am always trying to find ways to use black pudding at home so I figured why not make my tacos a little Irish-Mexican
Ingredients
- 200 g clonakilty black pudding (roughly chopped)
- 1 jalapeno (sliced)
- 1 corn ear
- 1 handful red cabbage (sliced)
- 6 flour tortillas
- 1/2 lime
- 1 handful coriander leaves
- 6 tbsp kewpie mayo
- 2 tbsp olive oil
