Ingredients

• 5 oz Earthbound Farm Organic Baby Red Butter + Arugula Blend
• 2 oranges, sliced
• 2 watermelon radishes, thinly sliced
• 1 fennel bulb, thinly sliced
• 1/4 cup shelled pistachios
• For the Herby Citrus Vinaigrette:
• 1/4 cup extra virgin olive oil
• 2 tablespoons white wine vinegar
• 1 tablespoon honey
• 1 tablespoon Dijon mustard
• 1 tablespoon fresh lemon juice
• 1 tablespoon finely chopped fresh parsley
• 1 tablespoon finely chopped fresh chives
• Salt and pepper to taste
