• ¼ cup (35g) icing sugar mixture
• 125g cold unsalted butter, cubed

• pulp of 4 passionfruit
• ¼ cup (55g) caster sugar
• pulp of 8 passionfruit
• 400ml thickened cream
• 1 vanilla bean, split, or 1 teaspoon vanilla extract
• 1 wide strip lemon zest (peeled with a knife from a lemon)
• 4 egg yolks
• 125g caster sugar
• ⅓ cup (50g) cornflour
• 50g butter, cubed
