Ingredients

• 250 ml (1 cup) unsalted butter, softened
• 125 ml (1/2 cup) fine maple sugar
• 500 ml (2 cups) all-purpose flour
• 500 ml (2 cups) ground almonds, plus another 125 ml (1/2 cup) for coating
• 500 ml (2 cups) maple syrup (preferably dark syrup for its robust flavour)
• 45 ml (3 tablespoons) butter
• 250 ml (1 cup) 35% cream
• 125 ml (1/2 cup) maple syrup
• 225 g (8 oz) unsweetened chocolate, chopped
• 30 ml (2 tablespoons) cold butter
• Maple flakes (for garnish)
