Ingredients

  • 250 ml (1 cup) almond paste or marzipan
  • 6 eggs
  • 280 ml (1 cup + 2 tablespoons) maple sugar
  • 125 ml (1/2 cup) maple syrup (preferably dark syrup for its robust flavour)
  • 250 ml (1 cup) flour
  • 5 ml (1 teaspoon) baking powder
  • 1 Pinch of salt
  • 250 ml (1 cup) unsalted butter, softened
  • 250 ml (1 cup) milk
  • 3 egg yolks
  • 60 ml (1/4 cup) maple sugar
  • 45 ml (3 tablespoons) all-purpose flour
  • 15 ml (1 tablespoon) maple syrup (preferably amber syrup for its rich flavour)
  • 15ml (1 tablespoon) cornstarch
  • 15 ml (1 tablespoon) unsalted butter
  • 1 tub of 225 g (1/2 lb) maple taffy
  • 3 egg whites
  • 1 pinch of fine salt
  • 15 ml (1 tablespoon) lemon juice
  • 125 ml (1/2 cup) maple sugar
  • 45 ml (3 tablespoons) water
  • 30 ml (2 tablespoons) maple syrup (preferably amber syrup for its rich flavour)
  • 125 ml (1/2 cup) sliced almonds
  • Sliced almonds, toasted (for decoration)
