I like making this because it is a quick marinade (only 30 minutes) and great for leftovers with rice. Fried basil leaves is traditional, but I prefer not doing the extra work and not comfortable...
Ingredients
- 4 pound boneless skinless chicken thighs cut into 1 inch, bite size pieces
- ½ C Chinese cooking wine (Shaoxing wine)
- ¼ C shoyu
- 4 t Chinese 5 spice powder
- 2 t Sichuan Peppercorn ground (also called dried prickly ash in some Asian markets)
- 2 t white pepper
- 2 cup potato starch
- 4 t sea salt
- Oil for frying
