Ingredients

• 2 cups samp
• 4 cups water
• 1 tablespoon salt
• 1 pound dried beans, picked over and rinsed
• 3 tablespoons vegetable oil or bacon fat
• 1 large onion, chopped
• 6 cloves garlic, minced
• 1 teaspoon ground cumin
• 1/2 teaspoon paprika
• 1 bay leaf
• Salt and pepper to taste
