Salsiccia con Lenticchie (Italian sausages with lentils) - The Gannet

Ingredients

• 200g diced pancetta, chopped
• 8 Italian sausages
• 1 carrot, finely chopped
• 1 onion, finely chopped
• 1 celery stick, finely chopped
• 200g Castelluccio lentils, or Puy if you’d prefer
• A few glugs of red wine
• 300ml chicken or vegetable stock
• 1 fat clove of garlic
• A few sprigs of thyme
