• 2 cups water
• 2 1/2 cups chicken broth
• 1/4 cup olive oil, divided
• 1/4 pound lean Italian sweet sausage, crumbled
• 1 shallot, minced
• 2 cloves garlic, minced
• 1 cup uncooked Rice Select’s Risotto Rice
• 1 cup dry white wine
• 1/4 cup drained and chopped oil-packed, sun-dried tomatoes
• 1/4 cup heavy cream
• 2 tablespoons grated Parmesan cheese
• 2 tablespoons chopped fresh parsley
