elote inspired charred corn soup
If you’ll been following us for a while you’ll know that Elotes are one of our favourite foods.
Ingredients
- 375g tinned sweetcorn
- 5 spring onions, whites and light greens
- 4 garlic cloves, whole
- 2 mild jalapeños
- 1 tin cannellini beans (with the liquid)
- 1 tsp chipotle paste
- 500ml vegetable stock
- 1 lime, juice (to taste)
- 40g vegan feta
- 1 tsp Tajin
- to taste salt
- 1 tbsp olive oil
- 30g vegan feta
- 1 tbsp vegan creme fraiche
- to garnish Tajin
- to garnish slices of fresh jalapeno
- to garnish fresh coriander
- a handful tortilla chips, crushed
