- 1 1/2 Tbsp. olive oil
- 3 1/2 cups low sodium chicken stock
- 2 Tbsp. unsalted butter
- 1 Tbsp. minced garlic
- 1/2 cup diced onions (small)
- 1 1/4 cups arborio rice
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/2 cup dry white wine
- 1 cup shredded Parmesan cheese (plus more for garnishing)
