Greek Lemon Soup with Chicken and Orzo | Wonderful Seedless Lemons

Ingredients

• 1 tablespoon olive oil
• 1 cup carrots, finely chopped
• 1 cup celery, finely chopped
• 1 cup shallots, finely chopped
• 2 garlic cloves, minced
• 8 cups low sodium chicken broth
• 2 bay leaves
• 1 cup orzo, uncooked
• 2 boneless chicken breasts, cooked and shredded
• 1 Wonderful Seedless Lemon , juiced
• 2 large eggs Salt and pepper to taste
• Fresh parsley for garnish
• Sliced bread of choice
