Ingredients

• 1.5 lbs Chicken, boneless, skinless chicken thighs
• 5 Garlic, cloves, rough chopped
• 2 Cup Mirepoix, 2 carrots, 2 celery stalk and half white onion, 2" diced
• 2 Bay Leaf
• 1/2 tbsp Oregano, dried
• 1 Cup Cherry Tomatoes, or cocktail tomatoes, halved
• 12 Oz Tomato Sauce
• 3 Cup Chicken Stock, preferably low sodium
• 18 Oz Cannellini Beans, drained and rinsed
• 1 Oz Kale, dino kale, rough chopped
• 1.5 tbsp Olive Oil, more for serving (optional)
• 1/4 Cup Parmesan Cheese, for serving
• 1/4 Cup Feta Cheese, crumbled, for serving, optional
• 1-2 tbsp Red Wine Vinegar, adjust per taste
• 1-2 tsp Salt, adjust per taste
• 1/2 tsp Black Pepper
