Ingredients

• 1 cup self-raising flour
• 1/4 teaspoon bicarbonate of soda
• 1/4 cup caster sugar
• 1 1/4 cup buttermilk
• 1 egg
• 30 gram butter, plus extra for cooking
• 2 tablespoon maple syrup, plus 2 tbsp extra, to serve
• 2 apples, cored, thinly sliced
• 250 gram tub mascarpone
• 1 vanilla bean, split, seeds scraped
