- 2 tablespoons minced garlic (about 5 cloves)
- 2 tablespoons chopped fresh rosemary
- 1 teaspoon salt
- 1/2 teaspoon pepper

- 3-5 pounds rack of lamb
- 1 cup fresh mint
- 1 cup fresh cooked peas
- 1/2 cup grated Parmesan
- 1/2 cup pine nuts, toasted
- 2 cloves garlic, peeled
- Juice of 1/2 a lemon
- 1/2 cup plus 3 tablespoons olive oil
