• 2 mangoes, peeled, pitted and cut into brunoise (small dice)
• 3 tablespoons (45 ml) sugar
• Grated zest of 1 lime
• 1 tablespoon (15 ml) gelatin
• 1/4 cup (60 ml) cold water
• 1 can 14 oz (398 ml) coconut milk
• 3/4 cup (180 ml) sugar
• 2 egg whites
• 1/2 cup (125 ml) 35% cream
