Ingredients

• 1 poblano pepper, halved and seeded
• 2 Tbsp. olive oil
• 1 ½ cups diced onions
• 2 Tbsp. minced garlic
• 2 cups chopped or shredded cooked turkey or chicken
• 1 pkg. ranch-style pinto beans (10 oz.), such as A Dozen Cousins brand
• 1 cup corn kernels, thawed if frozen
• ⅓ cup red enchilada sauce, such as Simply Organic brand
• 2 cups coarsely crushed white corn tortilla chips
• 1 cup shredded Mexican blend cheese
• 1 cup shredded chipotle Cheddar
• Salt and black pepper to taste
• Diced red onion, diced, seeded tomato, sliced avocado, and chopped cilantro
