Clementines, vanilla and rum Christmas turkey

Ingredients

• 1 approx. 4.5 lb. turkey (about 2 kg)
• 10 clementines
• 100g rock salt
• 50g butter
• Rosemary, handful of
• 1 spoon of honey
• 1 tbs. of vanilla extract
• 1 white onion, quartered
• Extra virgin olive oil
• Mix of spices (1/2 tsp cinnamon, 1tsp paprika, ½ tsp cumin, pinch of nutmeg)
• 50ml rum
• 100ml white wine
