Ingredients

• 1 lb andouille sausage, sliced into rounds
• 4 medium potatoes (Yukon Gold or Russet), peeled and diced into small cubes
• 1 medium onion, diced
• 1 bell pepper, diced
• 2 cloves garlic, minced
• 1 tsp smoked paprika
• 1/2 tsp cayenne pepper (optional for heat)
• 1 tsp dried thyme
• Salt and pepper to taste
• 2 tbsp olive oil
• 1/2 cup chicken broth (or water)
• Fresh parsley (for garnish)
