30 Minute Meatloaf Muffins - Iowa Food Cooperative

Ingredients

• Meatloaf:
• 1 lb ground beef
• 1/3 cup finely chopped onion
• 1/4 cup finely chopped bell pepper (optional)
• 2/3 cup plain breadcrumbs – can use either panko or regular (depending on your preference)
• 7 TB ketchup
• 1 dash hot sauce
• 1/2 tsp Worcestershire sauce
• 7 TB finely chopped fresh parsley or 2 TB + 1 tsp dried parsley flakes
• 2 large eggs (lightly beaten)
• 3/4 tsp fresh thyme or 1/4 tsp dried thyme
• 3/4 tsp salt
• 1/4 tsp ground black pepper
• Glaze:
• 1/3 cup ketchup
• 1 TB light brown sugar (packed)
• 1 TB Dijon mustard
