Ingredients

• 1/4 cup minced fresh flat-leaf parsley leaves, plus more for garnish
• 2 1/2 cups all-purpose flour
• 1/2 teaspoon freshly grated nutmeg
• 6 quarts water
• Coarse salt and freshly ground pepper
• 2 pounds green beans, trimmed and cut into 1 1/2-inch pieces
• 7 tablespoons extra-virgin olive oil
• 2/3 cup milk
