• 4 pork fillets, trimmed
• 10ml cracked pepper
• 20ml Maldon salt
• 20ml butter
• 40ml olive oil
• 2 red apples, thinly sliced
• 2 red onions, sliced
• 8 slices streaky bacon
• 32 small leeks, blanched
