Ingredients

• 1 lb pork tenderloin (washed and trimmed)
• 3/4 cup chimichurri sauce (divided) (you can buy it at the store or make it at home)
• 12 white corn street taco tortillas
• 2 cups shredded lettuce
• 1/2 small red onion (thinly sliced)
• 1/2 cup crumbled cotija cheese
• 4 red radishes (thinly sliced)
• 2 jalapenos (sliced, optional garnish )
• 2 lime (cut into wedges, optional garnish )
