- 1 1/2 cups whole milk
- 2 egg yolks
- lemon zest (from 1 1/2 lemons)
- 4 egg whites
- 2 to 3 tablespoons unsalted butter (at room temperature)
- 2 1/4 cups blackberry jam (warm, for serving)
- *OPTIONAL: maple syrup at the table*
