• 250g punnet cherry tomatoes
• 200g punnet yellow grape tomatoes
• olive oil spray
• 2 egg whites
• 1⁄2 cup cornflake crumbs
• 1⁄2 cup dry breadcrumbs
• 4 pork leg steaks, flattened slightly
• 400g can cannellini beans, rinsed
• 60g baby rocket or spinach leaves
• 1⁄2 cup chopped flat-leaf parsley
• 1 small red onion, finely chopped
• 2 cloves garlic, finely chopped
• 2 tablespoons lemon juice
• lemon wedges, to serve
