- 2 egg whites
- 1⁄2 cup cornflake crumbs
- 1⁄2 cup dry breadcrumbs
- 4 pork leg steaks, flattened slightly
- 400g can cannellini beans, rinsed
- 60g baby rocket or spinach leaves
- 1⁄2 cup chopped flat-leaf parsley
- 1 small red onion, finely chopped
- 2 cloves garlic, finely chopped
- 2 tablespoons lemon juice
