• 250g dried green or brown lentils
• 1 cucumber, diced
• 200g cherry tomatoes, halved
• 1 red bell pepper, diced
• 1/2 red onion, finely chopped
• 100g feta cheese, crumbled
• 60g Kalamata olives, pitted and sliced
• 30g fresh parsley, chopped
• 30g fresh mint leaves, chopped (optional)
• 60ml extra-virgin olive oil
• 30ml red wine vinegar
• 1 clove garlic, minced
• 5g dried oregano
• Salt and black pepper to taste
