CHEESY CHICKEN ENCHILADA SKILLET - Community Kitchen

Ingredients

• 1 T safflower oil (or other neutral oil)
• 1 yellow onion, chopped
• 2 garlic cloves, crushed + minced
• 1 t ground cumin
• 1 t kosher salt
• 1 C hot red salsa
• 1 C medium red salsa
• 1/2 C sour cream
• 4 corn tortillas, torn into quarters
• 4 C shredded cooked chicken
• 1 (15 oz) black beans, drained
• 1 C shredded cheese (I used Monterey Jack)
• 1 jalapeño, sliced
